Sheet Pan Sausage and Potatoes

Sheet pan meals really are the best of so many worlds. The ingredients are simple, everyone at my house loves them, the prep and dishes are minimal, you just can’t go wrong it seems. (Kitchen Tip: If you are on the run and want no pans to wash use parchment paper when roasting.)

The possibilities and combinations are endless. My go to is to start with some sort of smoked sausage or kielbasa. It already has so much natural flavor that you can keep your seasonings to a minimum.

Slice the kielbasa into thin coin shapes. The smaller pieces develop crispy edges, and let’s face it, the thinner slices give the appearance of lots of kielbasa – important when feeding a crowd of boys who love their protein.

Potatoes are usually whatever I have on hand. You truly can’t go wrong. I love to just quarter the baby potatoes or cut up Yukon golds for this. The key is even sizing for consistent roasting.

Broccoli is our go-to vegetable. Nutritious and the florets roast up brown and crisp. I would suggest keeping your broccoli size a bit bigger as it will cook the fastest and it is nice when it still has just a bit of crunch when it is done.

Sheet Pan Kielbasa and Potatoes

  • potatoes 
  • light olive oil
  • kosher salt 
  • freshly ground black pepper
  • kielbasa
  • broccoli

Sausage Sheet Pan Dinner

  1. Preheat the oven to 400°F. Place the potatoes on a large baking sheet. Drizzle with 2 tablespoons oil and sprinkle with 1 teaspoon salt and ½ teaspoon pepper. Toss with your hands to coat.
  2. Place the potatoes in the oven and roast for 20 minutes. Prep the kielbasa and broccoli while the potatoes begin cooking. Place the broccoli in a bowl and drizzle with the remaining oil. Sprinkle with the remaining salt and pepper. Toss to coat.
  3. After 20 minutes, remove the potatoes from the oven and stir. Add the kielbasa and the broccoli. Roast an additional 15-20 minutes, until everything is crisp and nicely browned.

  • 3 pounds potatoes cut into 1″ pieces

    My first time making a sheet meal and this did not disappoint! We only had frozen broccoli florets but I tossed them with a tiny splash of oil, onion powder and salt and it all turned out great! I was worried they’d be mushy but I took out of freezer when I started potatoes and cut them small if they were large. Thank you sooooo much.

    I added lemon pepper seasoning and garlic. Used potatoes, carrots, broccoli, bell pepper, onions and wedges of tomato. Followed cooking times. Everything mixed with olive oil to coat. Perfection!

    I just have one weird question. What size sheet pan did you use? I used my biggest one, and I still it didn’t all fit. I ended up putting the broccoli on a separate sheet pan. Oh

      I use a half size sheet pan, Jennifer. (approximately 13″x18″) The pan is definitely full though. If I want to cook a few extra vegetables though, I often split the recipe between two pans and just rotate them in the oven if needed. I hope that helps!

    This recipe was awesome. Used turkey kielbasa and added yellow onion and all purpose seasoning to the broccoli/onion mixture. This was cooked perfectly, and I had sour cream/horseradish for dipping. Will be adding this to my dinner rotation. Next time I’ll add some fresh mushrooms.

    Decent meal but slightly bland.
    I added sliced onion, and used frozen broccoli florets.
    Would make again but will season it better.

      I wonder if the frozen broccoli affected the results? I haven’t tried that myself, but it never seems to have quite as much flavor as fresh when I use it. Glad you were able to make it work for you, April. Fortunately, seasonings are adjustable. Did you use a traditional kielbasa sausage?
