Southwest Chicken Salad

It is a fact that I eat a salad every day. Most of the time, scratch that, all of the time my salads are topped with corn chips. Plain corn chips, chili corn chips, spicy, doesn’t matter, they are a salad topping in my book.

While the corn chips and fresh crispy lettuce are a given as to why salads are so amazing. They are also perfect for using up things in your refrigerator that there isn’t quite enough of to make a full dinner for the family. But combined into a salad, everyone is happy.

When it comes to salad making, especially when serving a crowd. Here me out – make your salad on a sheet pan or large shallow platter.

BBQ Ranch Chicken Salad

Think about it. When you make a big deep bowl the first people to take their servings get all the good stuff. You end up with a bowl full of just lettuce. Those getting the later servings get cheated.

Alternatively, if you toss things in the bowl before serving, a lot of the best ingredients fall straight to the bottom of the bowl.

These half-sheet pans are perfect for creating a beautiful presentation and spreading out those toppings for your crowd.

We eat with our eyes first so layering on the colors and textures of the tomatoes, corn, beans, and chicken on top of the romaine lettuce you create a salad that is hard to resist.

To make the dressing for the BBQ Ranch Chicken Salad you can absolutely use store-bought ranch and spicy barbecue sauce. For the ranch, I usually have some of this homemade ranch already in my refrigerator for the base.

Sheet Pan Salad

Salad Ingredients

  • Romaine lettuce
  • grape tomatoes
  • English cucumber
  • red bell pepper
  • yellow bell pepper
  • raw ears of corn kernels
  • red onion
  • can of black beans
  • cooked chicken
  • cheddar or pepper jack cheese
  • fresh cilantro
  • corn chips, crushed tortilla chips, or tortilla strips

Dressing Ingredients

  • ranch dressing
  • spicy barbecue sauce

Barbecue Ranch Chicken Salad

  1. Combine lettuce, tomatoes, cucumber, bell pepper, corn, onion, black beans, chicken, cheese, and cilantro in a large bowl or on a platter. (I like to use these half-sheet pans as pictured for a prettier presentation.) Top with corn chips or tortilla chips.
  2. Combine the ranch dressing with the barbecue sauce and stir well. Serve with dressing on the side or tossed together. Leftover dressing will keep nicely in the refrigerator for up to two weeks.

Ingredients 

Salad Ingredients

  • 3 heads Romaine lettuce chopped, about 12 cups
  • 10 ounces grape tomatoes sliced in half
  • 4 mini or 1 English cucumber cut into bite-size pieces, about 1 cup
  • 1 red bell pepper seeded and cut into bit size pieces, about 1 cup
  • 1 yellow bell pepper seeded and cut into bit size pieces, about 1 cup
  • 2 raw ears of corn kernels removed or (1) 15.25-ounce can of corn, drained
  • ½ red onion sliced thin and chopped OPTIONAL
  • 15.5 ounce can of black beans drained and rinsed
  • 2 cups cooked chicken cut into bite size pieces
  • 4 ounces cheddar or pepper jack cheese cut into matchsticks or shredded, about 1 cup
  • ¼ cup fresh cilantro chopped
  • 2 cups corn chips, crushed tortilla chips, or tortilla strips

Dressing Ingredients

  • cup ranch dressing
  • cup spicy barbecue sauce

Instructions

  • Combine lettuce, tomatoes, cucumber, bell pepper, corn, onion, black beans, chicken, cheese, and cilantro in a large bowl or on a platter. (I like to use these half-sheet pans as pictured for a prettier presentation.) Top with corn chips or tortilla chips.
