Sheet Pan Potatoes with Broccoli and Kielbasa
Bite-size chunks of potato, kielbasa, and broccoli are roasted together for a super easy sheet pan meal that the whole family loves.

- 3 pounds potatoes cut into 1" pieces
- 2 tablespoons light olive oil divided
- 1½ teaspoon kosher salt divided
- ½ teaspoon freshly ground black pepper
- 14-16 ounces kielbasa cut into ⅓" slices
- 2 pounds broccoli cut into bite-size florets
Preheat the oven to 400°F. Place the potatoes on a large baking sheet. Drizzle with 2 tablespoons oil and sprinkle with 1 teaspoon salt and ½ teaspoon pepper. Toss with your hands to coat.
Place the potatoes in the oven and roast for 20 minutes. Prep the kielbasa and broccoli while the potatoes begin cooking. Place the broccoli in a bowl and drizzle with the remaining oil. Sprinkle with the remaining salt and pepper. Toss to coat.
After 20 minutes, remove the potatoes from the oven and stir. Add the kielbasa and the broccoli. Roast an additional 15-20 minutes, until everything is crisp and nicely browned.
