Sheet Pan Potatoes with Broccoli and Kielbasa

Bite-size chunks of potato, kielbasa, and broccoli are roasted together for a super easy sheet pan meal that the whole family loves.

Ingredients

  • 3 pounds potatoes cut into 1" pieces
  • 2 tablespoons light olive oil divided
  • teaspoon kosher salt divided
  • ½ teaspoon freshly ground black pepper
  • 14-16 ounces kielbasa cut into ⅓" slices
  • 2 pounds broccoli cut into bite-size florets

Instructions

  • Preheat the oven to 400°F. Place the potatoes on a large baking sheet. Drizzle with 2 tablespoons oil and sprinkle with 1 teaspoon salt and ½ teaspoon pepper. Toss with your hands to coat.
  • Place the potatoes in the oven and roast for 20 minutes. Prep the kielbasa and broccoli while the potatoes begin cooking. Place the broccoli in a bowl and drizzle with the remaining oil. Sprinkle with the remaining salt and pepper. Toss to coat.
  • After 20 minutes, remove the potatoes from the oven and stir. Add the kielbasa and the broccoli. Roast an additional 15-20 minutes, until everything is crisp and nicely browned.
