This smoked sausage vegetable stir fry is a complete meal, in one pan, on the table in less than 20 minutes. The best part is the amazing flavors that are created with just a few ingredients!

One pan or one pot meals will minimal dishes and tons of flavor are so must for a busy family. Like bite-size chunks of potato, kielbasa, and broccoli, roasted together for a super easy sheet pan meal that the whole family loves.

Smoked sausage or kielbasa is one of my favorite items for stir fry and quick skillet meals. It has so much flavor already imparted from the smoking and spices. It is easy just to put any vegetable with it for a one-pan stovetop meal.

This is a great dish to have in your pocket when shopping the sale fliers. Turkey, beef, or pork really any of them work great. Be sure to stock up on a few packages of sausage in the freezer to have on hand for a quick dinner.

When slicing the sausage keep the pieces to 1/4-inch thick or so. This gives more surface area to get crispy and flavorful. It also cooks more quickly to get dinner on the table in no time at all.

Sausage Stir Fry Recipe

  1. Warm the oil in a very large skillet, over medium-high heat. Add the yellow onion and kielbasa to the skillet and saute 4-5 minutes, stirring frequently, until lightly browned.
  2. Add the garlic and bell pepper and continue cooking for 2 more minutes.
  3. Add the squash and the corn. Cook, stirring frequently until the squash has barely wilted and is still slightly crisp about 2-3 minutes.

When using smoked sausage you don’t typically need much additional seasoning. The smokiness and sausage spices flavor the entire dish when cooking. I always taste test before adding salt especially.

We typically enjoy this smoked sausage vegetable stir fry exactly as written below, served either on its own or with a salad on the side. For a heartier meal, it’s also great served over rice. (It would be awesome over this vegetable rice pilaf too!)

This recipe can also be made with (thawed) frozen corn or canned corn. Drain any excess water off the corn and then follow the recipe as written.

Stir fries make for such a perfect flavorful dinner plan. Thinly sliced flank steak in a garlicky ginger sauce makes for a delicious weeknight steak and pepper stir fry.

One pan, easy meals are the key to dinnertime at our house, roasted brats with potatoes and green beans fit that bill nicely.

Zucchini, mushrooms, and sausage are tossed with penne in a spicy sauce for an easy dinner win in this simple skillet meal.

Ingredients 

  • 1 tablespoon light flavored olive oil
  • ½ medium yellow or purple onion sliced into ¼-inch strips, about ¾ cup
  • 1 pound smoked sausage sliced thinly at an angle
  • 3 cloves garlic minced
  • 1 red pepper sliced into ⅓-inch strips, about 1 cup
  • 1 medium Italian zucchini  sliced ¼-inch thin, about 2 cups
  • 2 ears corn kernels removed from the cob, about 2 cups
  • ½ teaspoon kosher salt adjust to taste
  • ½ teaspoon freshly ground black pepper adjust to taste

Instructions 

  • Warm the oil in a very large skillet, over medium-high heat. Add the yellow onion and kielbasa to the skillet and saute 4-5 minutes, stirring frequently, until lightly browned.
  • Add the garlic and bell pepper and continue cooking for 2 more minutes. Add the squash and the corn. Sprinkle with salt and pepper. Cook, stirring frequently, until the squash has barely wilted and is still slightly crisp, about 2-3 minutes.
  • Taste the stir-fry and adjust salt and pepper, as needed. Serve warm.
