Crispy Green Beans

We love crispy green beans so much that I almost always cook a full two pounds. However, if you aren’t feeding an army of hungry boys, feel free to follow the directions below and stick with just a pound of green beans.

The addition of parmesan with its rich, salty flavor, plus the crunch it creates with these beans makes this recipe irresistible. My family was grabbing them right out of the bowl as soon as I finished snapping the photos.

Parmesan cheese is a key ingredient in this recipe. It is finely shredded and then sprinkled generously over the green beans. The cheese adds a rich, savory, and nutty flavor that complements the green beans beautifully.

The roasting process imparts a smoky, slightly caramelized flavor to the green beans, and it gives them a terrific crispy texture. As they roast, the Parmesan cheese becomes golden brown and forms a crispy, savory crust on the green beans.

The green beans are tossed with just enough olive oil to help the seasonings stick to them. Then they’re generously sprinkled with garlic, salt, and pepper.

I like to add a bit of smoked paprika too, as I enjoy the way the paprika complements the garlic. If that isn’t your thing, feel free to skip it. The garlic is the main player in the spices here.

I recommend tasting a bit of the cheese as you’re shredding it, to determine how much salt you might need to add to the recipe. Some varieties of Parmesan cheese tend to be saltier than others.

And while I typically use Parmesan and Pecorino cheese interchangeably, Pecorino is significantly saltier and you don’t want your green beans to actually taste salty.

When unsure of how much salt to use in a recipe, I lean towards using less. You can always taste the finished green beans and add a sprinkling of salt at the end.

Season the green beans with salt, pepper, garlic, and paprika. In a small bowl, stir together the parmesan and panko bread crumbs. Sprinkle panko and parmesan over the green beans.

Roast the green beans for 10-15 minutes, stir, and roast for an additional 10-15 minutes. When the beans and tender and the topping is golden brown and crisp, they’re done.
