Green Beans with Garlic
Growing up it seemed like canned green beans were served on the regular. I get it, it was easy and cost-effective for a busy mom feeding a large family.
That being said I did not discover the deliciousness of fresh green beans until much later in life. The fact they are almost always available at the grocery store now is a fantastic find.
Snapping green beans is a fun activity to do with kids. When my boys were younger, they thought it was fun to snap off the ends. You can leave them whole or snap them into 2-3 inch lengths.

Green Beans with Herbs
To roast the green beans, first you’ll toss them with olive oil and salt and pepper. After roasting, add the herbs and a squeeze of fresh lemon.
The herbs and lemon work together to give the green beans a light fresh taste. Just before serving top with little pats of butter and allow it to melt ever so slightly.
In a pinch, I have used frozen green beans for this recipe and they cook up nicely. Just adjust the water to a little less if needed. Canned green beans though – sorry, still not much of a fan.

Garlic Roasted Green Beans
- olive oil
- green beans
- garlic cloves
- kosher salt
- freshly ground black pepper
- lemon juice
- fresh thyme
- fresh Italian parsley
- butter

Garlic Green Beans Recipe
- Preheat your oven to 425°F. Place the green beans on the baking sheet and drizzle with oil. Sprinkle with garlic, salt, and pepper and toss to coat.
- Roast the green beans for 16-20 minutes. If you want crisp edges, continue cooking for an additional 3-4 minutes.
- Remove from the oven and drizzle with lemon juice. Sprinkle with thyme and parsley. Taste and season with additional salt and pepper as needed.
- Top with very thin pats of butter and serve warm.
