Roasted Green Beans with Garlic

Easy and flavorful green beans with garlic and herbs are a simple dinner side for any occasion, weeknight or holiday gathering.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound green beans, trimmed and cut into 2-inch lengths
  • 3 garlic cloves, minced
  • ½ teaspoon kosher salt adjust to taste
  • ¼ teaspoon freshly ground black pepper adjust to taste
  • 2 teaspoons lemon juice
  • 1 teaspoon fresh thyme, minced
  • 1 tablespoon fresh Italian parsley, chopped
  • 2 tablespoons butter sliced into very thin pats

Instructions

  • Preheat your oven to 425°F. Place the green beans on the baking sheet and drizzle with oil. Sprinkle with garlic, salt, and pepper and toss to coat.
  • Roast the green beans for 16-20 minutes. If you want crisp edges, continue cooking for an additional 3-4 minutes.
  • Remove from the oven and drizzle with lemon juice. Sprinkle with thyme and parsley. Taste and season with additional salt and pepper as needed.
  • Top with very thin pats of butter and serve warm.
