These roasted red potato wedges are wonderfully flavorful. Seasoned however you like they make a terrific side dish or an easy after-school snack.

We love to dip ours in homemade ranch, turn them into loaded potato wedges, or top them with cheese.

It is no secret that roasted potatoes are a regular side dish at our house. These oven roasted red potatoes are simple to make and the seasoning options are endless. A stocked spice drawer makes it easy to change up this simple side on a whim.

Italian seasoning is often used, but these chili powder-seasoned potato wedges are my current favorite. Tossed in olive oil and then salt and pepper along with garlic and chili powder they will be your new favorite as well.

Crispy Red Roasted Potatoes

For oven-roasted potatoes, red skins are often my preferred potato. They are typically smaller in size and it takes no time at all to cut them into even-sized wedges. My usual rule of thumb is to cut them into eighths.

For the best results when oven roasting, keep the potato wedges as even in size as possible. Second, make sure they are evenly coated with oil. A light coating of olive oil delivers crispy roasted potatoes every time.

Lastly, make sure you have an even, single layer of potatoes on the baking sheet. Overcrowding will result in cooked potatoes but they won’t develop the delicious crispy edges we all love!

Not a cripsy fan? Simple and scrumptious, boiled baby potatoes tossed with butter and fresh parsley are a classic side to go with any meal.

Roasted Red Skin Potatoes

Ingredients 

  • red potatoes
  • olive oil
  • garlic
  • ground black pepper
  • kosher salt
  • chili powder

Instructions

  1. Preheat oven to 400°F. Place the sliced potatoes on a large rimmed baking sheet and drizzle with oil. Sprinkle with all of the spices. Toss with your hands to thoroughly coat.
  2. Roast for 40 minutes, until tender and lightly browned on the edges. Remove from the oven and stir or flip the potatoes over with a thin spatula. Roast an additional 10-20 minutes until deep golden brown. Serve alone or with the dipping sauces of your choice.

  • 6 medium size red potatoes washed and cut into 8 slices lengthwise
  • 2 tablespoons olive oil
  • ½ teaspoon garlic
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon chili powder optional

Instructions
