Cajun Potatoes

You’ll need the following ingredients to make this recipe:

  • olive oil
  • Cajun seasoning
  • small red or yellow potatoes
  • shredded Mexican blend cheese

Recipe for Cajun Potatoes

Preheat the oven to 400°F. Stir together the spices and the oil in a large mixing bowl. Add the potatoes to the bowl with the spice mixture and stir or toss well with your hands to thoroughly coat.

Transfer the potatoes to a greased 10-inch baking dish. Roast for 30 minutes, until the potatoes are tender.

Stir the potatoes and top with cheese. Return the potatoes to the oven and bake for 5-6 minutes more, until the cheese has melted. Serve warm.
