Not sure how to make oven-roasted green beans? Keep these easy tips in mind, and you’ll get a tasty result every time.

First, it goes without saying, that fresher, higher quality produce is going to taste better. Inspect green beans at the store, and avoid the ones with brown spots or withered tips.

Second, I find it easier and less messy to toss the green beans in a bowl with oil and season them before putting them on the pan.

How to Roast Green Beans

Here are the step-by-step instructions for cooking green beans:

Prep the oven: Preheat your oven to 425°F. Smaller pieces will roast better with higher heat and less time.

Prep the green beans: Peel and trim the ends, then cut to the desired size. Oil and season the pieces, then arrange on a sheet pan.

How Long to Roast Green Beans

Not sure how long to roast green beans? You’re going to be pleasantly surprised. Green beans roast quite quickly.

Roasted whole green beans can finish with as little as 14-16 minutes in the oven. The beans will begin to wilt when they are cooked through.

A fish spatula is my favorite tool for turning vegetables. It is thin and flexible for sauteing, frying, turning, and lifting anything from fish to cookies to vegetables. 

For the perfectly crisp edges shown with the green beans here, continue cooking for an additional 6-8 minutes, watching closely and pulling them from the oven when done to the level you like best.

I LOVE very well-roasted green beans with super crispy and charred edges. However, If you like your green beans to remain a brighter green color with more bite to them, watch them after about 15 minutes and pull them from the oven when they’re done to your liking.  

Fresh green beans are absolutely delicious when served either way. I have learned how to roast green beans both ways depending on what I’m craving. 90% of the time though, I allow them to crisp up and the whole family eats them right off the pan.

Note: This recipe multiplies beautifully because green beans do shrink a good bit when cooking them this way. You can double or triple the recipe without any issues.

Ingredients 

  • 2 tablespoons olive oil
  • 1 pound green beans ends trimmed
  • ½ teaspoon kosher salt adjust to taste
  • ¼ teaspoon freshly ground pepper adjust to taste

Instructions

  • Preheat your oven to 425°F. Place the green beans on the baking sheet and drizzle with oil. Season with salt and pepper and toss to coat.
  • Roast the green beans for 14-16 minutes. If you want perfectly crisp edges shown here continue cooking for an additional 6-8 minutes.
