I spent a lot of time eating maple roasted Brussels sprouts while determining the perfect amount of syrup to include in this recipe. But I’m not complaining. They are really that good.

The sweet decadence of maple syrup balances the soft nuttiness of roasted Brussels sprouts and the crispy bacon pieces in a dish that is simply divine. If you serve this to guests, the odds are good that you will be asked for this recipe.

Hey, it’s ok. I get it. If you’re recovering from childhood meals spent choking down mushy green blobs that your mom called ‘Brussels sprouts’, then you’re safe here among friends. But, these maple-roasted Brussels sprouts are nothing like that.

Roasted Brussels sprouts are nothing like their steamed brethren. They are slightly nutty tasting, with crispy, charred edges that yield to the soft inner leaves. Those crispy bits absolutely transform this vegetable.

Once you’ve mastered roasting Brussels, I highly recommend you try them smashed!

I have become a diehard Brussels sprouts fan as an adult. I’ve tried them a lot of ways. They’re good with bacon and apples, potatoes and sausage, or even by themselves with melted cheese on top.

But, this recipe is one of my favorites. There’s something so delicious in tasting maple-glazed chunks of Brussels sprouts and bacon. Be careful tasting this dish–you will not be able to stop with just a bite.

PLEASE NOTE: This recipe uses raw bacon as an ingredient. It will cook and crisp to perfection in the oven as you bake the Brussels sprouts.

If you try this recipe with pre-cooked bacon, you’ll end up with a burnt mess. You might be wondering, “Why would you need to include a warning about that?” Well, let’s just say I miiiight have a brother who has done it. Sorry, bro!

Bacon and Brussels is one of those food combinations that simply doesn’t get old. Brussels sprouts with bacon, sliced almonds, and garlic is a side dish dream. A drizzle of red wine vinegar brings all of the flavors together in this easy recipe.

Tender pasta and crisp Brussels sprouts are combined with a smoky bacon cream sauce in this irresistible pasta dish.

Crisp edges with a tender center, these tangy lemon garlic Brussels sprouts pack a delicious garlicky kick. This recipe is so easy, you’ll be eating them out of the pan in no time at all!

It is a toss-up for me on what are my favorite flavors to accompany Brussels sprouts. I waver between salty bacon and the sweetness of balsamic honey glaze or add some heat to the sweet with honey sriracha.
