I spent a lot of time eating maple roasted Brussels sprouts while determining the perfect amount of syrup to include in this recipe. But I’m not complaining. They are really that good.

The sweet decadence of maple syrup balances the soft nuttiness of roasted Brussels sprouts and the crispy bacon pieces in a dish that is simply divine. If you serve this to guests, the odds are good that you will be asked for this recipe.

Roasted Brussels sprouts are nothing like their steamed brethren. They are slightly nutty tasting, with crispy, charred edges that yield to the soft inner leaves. Those crispy bits absolutely transform this vegetable.

Once you’ve mastered roasting Brussels, I highly recommend you try them smashed!

Maple Brussels Sprouts

I have become a diehard Brussels sprouts fan as an adult. I’ve tried them a lot of ways. They’re good with bacon and apples, potatoes and sausage, or even by themselves with melted cheese on top.

But, this recipe is one of my favorites. There’s something so delicious in tasting maple-glazed chunks of Brussels sprouts and bacon. Be careful tasting this dish–you will not be able to stop with just a bite.

Bacon Brussels Sprouts

  1. Preheat the oven to 400°F. Place the Brussels sprouts in a 9×13 baking dish. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
  2. Top with bacon pieces. Roast until the bacon is cooked through and the Brussels have crisp edges, about 30 minutes.
  3. Stir once, halfway through the cooking time, if desired. Drizzle with maple syrup before serving.

PLEASE NOTE: This recipe uses raw bacon as an ingredient. It will cook and crisp to perfection in the oven as you bake the Brussels sprouts.

If you try this recipe with pre-cooked bacon, you’ll end up with a burnt mess. You might be wondering, “Why would you need to include a warning about that?” Well, let’s just say I miiiight have a brother who has done it. Sorry, bro!

Ingredients 

  • 1 pound Brussels sprouts trimmed and halved
  • cup extra-virgin olive oil
  • 4 slices bacon cut into 1/2-inch pieces
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon maple syrup

Instructions

  • Preheat the oven to 400°F. Place the Brussels sprouts in a 9×13 baking dish. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
  • Top with bacon pieces. Roast until the bacon is cooked through and the Brussels have crisp edges, about 30 minutes. Stir once, halfway through the cooking time, if desired. Drizzle with maple syrup before serving.
