Cheesy Cajun Potatoes
Bite-size chunks of potatoes are tossed in a generous sprinkling of Cajun seasoning before roasting until tender perfection. Then they're smothered in a blanket of cheese to finish off these cheesy Cajun potatoes.

- 2 tablespoons light flavored olive oil
- 3 tablespoons Cajun seasoning
- 2½ pounds small red or yellow potatoes halved or cut bite-size
- 2 cups shredded Mexican blend cheese
Preheat the oven to 400°F. Stir together the spices and the oil in a large mixing bowl. Add the potatoes to the bowl with the spice mixture and stir or toss well with your hands to thoroughly coat.
Transfer the potatoes to a greased 10-inch baking dish. Roast for 30 minutes, until the potatoes are tender.
Stir the potatoes and top with cheese. Return the potatoes to the oven and bake for 5-6 minutes more, until the cheese has melted. Serve warm.
