Mushrooms are one of my all-time favorite foods. We go through a lot of them at my house, so good added to pasta. But, this is one of my favorite ways to prepare them. It takes very little time to get these to the table.
Buttered Mushrooms with Fresh Herbs
This recipe for buttered mushrooms with fresh herbs begins with sauteing the mushrooms, garlic, and onions together. But, remember to start with a hot pan for best results. For me, this Misen pan is the perfect skillet for sauteeing.
Also, mushrooms can be a little finicky. Most people who don’t like mushrooms have experienced poorly cooked mushrooms that were squeaky, rubbery, etc.
You can avoid that result if you give them plenty of space in the pan. No more than a single layer of mushrooms, spread out for maximum airflow.

How To Season Mushrooms
Also, always add your salt and seasoning at the end with mushrooms. Salt draws out moisture, and so if you add it to mushrooms at the beginning, it can be difficult to attain a proper sear.
I’m personally a fan of cooking these with dry white wine; it seems to make the flavors that much bolder, to me. And, using such a small quantity allows it to rapidly cook out any alcohol content.
But, I’ve also made these with chicken broth and the results are also quite good. Regardless, you’re going to want to make them again.
