Bacon Roasted Potatoes

Oven roasted potatoes are the easiest and tastiest side dish we make all the time. While I usually use whatever potatoes are in the pantry. In doing that I have discovered there are differences but no doubt my crew will eat them all.

For a super crispy crust yet fluffy mild center, russets are best. They tend to stay the crispest after roasting. Which is amazing for loading up with cheese and bacon.

Yukon Golds are flavorful creamy potatoes that have a lower starch content and will crisp up but the exterior softens quickly after removing from the oven.

Red potatoes are great because of their thin skins. I really don’t bother peeling them and they roast up nice, dark and crunchy but they get soft and tender after roasting.

For the cheese lovers, I’ve been making these Cheesy Bacon Potatoes (with three times the cheese!) for more years now than I can remember and it really doesn’t matter which potatoes you use. They turn out perfectly every time.

Bacon Roasted Potatoes

For ease of preparation though my favorite is the baby potatoes. They are easy to wash and cut in half for evenly sized pieces, perfect for oven roasting.

Mexican cheese blend is perfect for melting on potatoes. I have gotten the question before about using the Mexican cheese blend and whether it is spicy. The answer is no. Mexican blend is referring to a blend of cheeses that melt easily and are nice and creamy.

When I make bacon roasted potatoes the hardest part is timing them to come out of the oven at the same time everything else is ready. If they come out too soon I sneak so many off the pan that I end up too full for dinner.

Roasted Potatoes with Bacon

  1. Preheat the oven to 425°F. Place the bacon grease on a large metal sheet pan and pop it in the oven for a moment, just to melt it to liquid if needed. Add the potatoes to the sheet pan. Toss to coat thoroughly and sprinkle generously with salt and pepper.
  2. Spread the potatoes across the baking sheet. Roast for 40 minutes, remove from the oven and stir. Sprinkle with cheese and crumbled bacon.
  3. Roast an additional 3-5 minutes just to melt the cheese. Remove from the oven and sprinkle with parsley before serving.

Ingredients 

  • 2 slices bacon cooked and crumbled
  • 2 tablespoons reserved bacon grease
  • 2 pounds potatoes chopped bite size (about 4 cups)
  • 1 teaspoon kosher salt adjust to taste
  • ½ teaspoon freshly ground black pepper adjust to taste
  • ½ cup shredded Mexican cheese blend or plain cheddar cheese
  • 1 tablespoon finely chopped Italian parsley

Instructions

Notes

Feel free to swap sliced green onions for the parsley in this recipe. Either one will work nicely to brighten the flavors.
