Seared vegetables are a good way to add a kick of flavor to a meal. Served on their own as a side or used as an ingredient sauteed peppers and onions work wonderfully in a number of different ways.
Colorful bell peppers and onions cook down easily to serve on top of Italian sausage sandwiches. Add a sauce and melted cheese and your entire meal is ready and easy to eat on a bun.
I am continually amazed at the amount of flavor that comes from the bit of char on bell peppers and onions when you give them a quick saute.
For the best results cut your vegetables into evenly sized pieces. I core and remove the seeds from the peppers. Then slice them into strips about 1/4″ wide. Cut your onion in half and then into pieces about the same thickness as the peppers.
Sauteed peppers and onions are the perfect way to use up those peppers that you forgot in the refrigerator. No worries, we have all done it but you can easily toss them onto pizza or into an omelet once you have them sauteed.

Sauteed Onions and Peppers
Sauteeing does release moisture in the peppers and onions, which can make it a bit more difficult to get those tasty charred pieces. This Misen skillet is my absolute favorite for sauteeing vegetables.
Let me help you with a couple of tips to get the nicely charred bits. Make sure your oil is hot when you start. That instant sizzle starts the sear on the vegetables. Be careful not to overcrowd your pan.
When caramelizing your onions and peppers be sure to season at the end. Salting too early when cooking can draw out too much moisture, resulting in soggy, steamed peppers instead nicely caramelized edges.
How to Saute Peppers and Onions
- olive oil
- bell peppers in any color
- yellow onion
- garlic
- kosher salt
- ground black pepper
- Warm the oil in a large skillet over medium-high heat. Add the bell peppers and onions. Toss to coat. Cook, stirring frequently, until the vegetables are tender-crisp, and lightly browned, about 6-8 minutes.
- Add garlic, if desired, and continue cooking for about 1 minute, until fragrant. Season to taste with salt and pepper.

Quick Sauteed Peppers and Onions
Ingredients
- 2 tablespoons olive oil
- 3 bell peppers any color, sliced into narrow strips
- 1 medium yellow onion sliced thin
- 3 cloves garlic minced OPTIONAL
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Warm the oil in a large skillet over medium-high heat. Add the bell peppers and onions. Toss to coat. Cook, stirring frequently, until the vegetables are tender-crisp, and lightly browned, about 6-8 minutes.

I make a similar mix of sauteed bell peppers and onions.I add them to pasta then add some cherry tomatoes and olives, drizzle with some olive oil and herbs/spices and I get a tasty (and healthy) pasta salad.
