- 2 tablespoons olive oil
- 3 bell peppers any color, sliced into narrow strips
- 1 medium yellow onion sliced thin
- 3 cloves garlic minced OPTIONAL
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Warm the oil in a large skillet over medium-high heat. Add the bell peppers and onions. Toss to coat. Cook, stirring frequently, until the vegetables are tender-crisp, and lightly browned, about 6-8 minutes.
Add garlic, if desired, and continue cooking for about 1 minute, until fragrant. Season to taste with salt and pepper.
