Pickled Cabbage

Vinegar and vegetables were simply made for each other. Salads, pickled vegetables, marinades, and more – there’s just something amazing about the way vinegar transforms the flavors of a basic vegetable to bring it new life.

This recipe uses apple cider vinegar to quickly pickle the cabbage while it rests in the refrigerator. This type of vinegar is milder and gives more sweetness to the resulting side dish.

You’ll want to use a jar or a container with an airtight lid when chilling the cabbage. While you can serve the cabbage after just a few hours in the fridge, with this setup, you can allow it to pickle for a day or two to get the best flavor in your spicy pickled cabbage.

I like to use these glass storage containers with leakproof lids. They’re great for all sorts of food storage and they are handy for serving as well.

Pickled Cabbage Recipe

You’ll need the following ingredients to make this recipe:

  • green cabbage
  • apple cider vinegar
  • light-flavored olive oil
  • sugar
  • kosher salt and black pepper
  • Cholula hot sauce (optional, adjust for more heat)

And, speaking of spicy, if you want more heat, feel free to add red pepper flakes, or even spicy peppers to the recipe. Both will pickle well and add plenty of sizzle.

Spicy Cabbage

Start by preparing the green cabbage. Wash and core the head, then finely slice or chop with a sharp knife.

Pour the vinegar, olive oil, and hot sauce (if desired) into a large mixing bowl. Whisk together the liquids.

Then, add the shredded cabbage and toss well to coat. Sprinkle with salt, pepper, and sugar.

Toss again to mix throughout. Taste and adjust spices, as needed. Chill in the fridge for 4 hours before serving.

  • ½ cup apple cider vinegar
  • 2 tablespoons light flavored olive oil
  • 2 tablespoons Cholula hot sauce OPTIONAL
  • 8 cups shredded green cabbage
  • teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons sugar

Instructions
