Creamed Cabbage

I love a good classic recipe as much as the next person. But I am often found daydreaming what ifs. . . what if I change this ingredient? Or what if added this -insert your favorite thing here- some days all the ideas and options just keep coming.

Lately, my head has been swapping everything for cabbage. It is such a filling, comfort food this time of year and you can’t get much easier on the grocery budget. Cabbage has been making a regular appearance on our dinner menu and I have yet to hear a complaint.

Creamed Cabbage is a riff on creamed spinach. This flavorful dish is slightly lighter than its counterpart as I used milk instead of cream. I loved how it coats the cabbage very lightly and doesn’t drown it. Crazy as it sounds I do like to taste my vegetables.

I keep the cabbage slightly crisp, it is the texture we prefer. However, if you like your cabbage creamed to be more tender, you can cook it a little bit longer, mere minutes will wilt it a bit more.

I always encourage people when cooking or baking with cabbage don’t be afraid of the seasoning. It will take a healthy dose of salt and pepper to season it. Just taste as you go to get it just right for your family.

My family really enjoyed this dish. I served it as a side dish with meatloaf and mashed potatoes the first time I made it. The next time I made it, I added about a pound of thinly sliced sauteed kielbasa. It was a whole meal that way and my guys devoured it.

Creamy Cabbage

A head of cabbage and a trip to your pantry should be all you need:

  • butter
  • all purpose flour
  • milk
  • kosher salt
  • freshly ground black pepper
  • green cabbage
  • fresh thyme and/or chopped parsley

Creamed Cabbage Recipe

My favorite recipes come together in one pot or pan. This hits that target!

  1. Melt 2 tablespoons butter in a large skillet over medium heat. Add the flour and whisk to combine. Slowly add the milk while whisking constantly. Bring to a simmer and continue stirring until thickened, about 5 minutes.
  2. Add the salt and pepper and stir to combine. Taste and adjust as needed. Add the cabbage and toss to coat. Cover with lid and cook for about 5 minutes.
  3. Stir and cover again. Cook an additional 2-5 minutes to the desired doneness. Uncover and simmer to thicken as needed, just a minute or two longer. Stir in the remaining tablespoon of butter. Sprinkle with herbs, if desired. Serve warm.

Cabbage Recipes with Pork

Cabbage and pork make for such a natural combination for me. Perhaps it is the pork and sauerkraut tradition but fresh cabbage goes so well with it too! I have found so many ways that combination works.

Soup that is filling and flavorful is a winner every time. That puts cabbage bean with sausage soup high on the request list at our house.

Tender potatoes, crisp cabbage, and spicy sausage added up to an easy dinner that the whole family enjoys. Chunks of cheese melt into this dish adding just the right amount of richness.

Fried Cabbage with crispy bacon and slightly wilted cabbage is a classic not to sleep on. Let’s face it bacon is every vegetable’s best friend.

Creamed Cabbage

Ingredients 

  • 3 tablespoons butter divided
  • 2 tablespoons all purpose flour
  • 2 cups milk
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 medium head green cabbage sliced thin, about 8 cups worth
  • 1 teaspoon fresh thyme and/or chopped parsley OPTIONAL
