Black Bean Tostada

Crisp tostada shells topped with a mixture of seasoned black beans, spinach, and melty cheese make a satisfying and healthy meal that’s easy to prepare.

To make these black bean tostadas, you’ll start with a crispy fried corn tortilla, called a tostada. (It’s basically a giant round tortilla chip.) The tostada shell is topped with seasoned black beans and spinach before being topped with cheese.

Once assembled, the tostadas are baked for just long enough to warm everything and melt the cheese. When they come out of the oven, add your favorite toppings. Diced tomatoes, avocado, a dollop of sour cream, hot sauce, and salsa all work well with this recipe.

Not a big fan of spinach? No worries. Chop it small and you won’t even know it’s there. Sure, you can skip it too, but why not get in some greens along with your cheesy tostada?

How to Eat a Tostada

When a tostada is staring at you from the plate it can be daunting to know what to do? Grab a knife and a fork? Pick it up? What does one do?

Two hands are all you need. The shell should be crispy and slightly firm. Any attempt to use a knife and fork will likely shatter the shell, leaving you with a tasty pile of ingredients. Delicious no doubt, but a pile for sure.

Just pick the tostada up, straight up that is, and take a bite. Much like eating crunchy tacos, it’s smart to lean over your plate as there is a good chance you may have some spillage.

Keep a napkin handy and enjoy all those tasty flavors held together with melted cheese.

Black Bean Tostadas

To make tostadas you will need the following ingredients:

  • black beans
  • olive oil
  • Mexican spice mix or taco seasoning
  • baby spinach leaves
  • tostada shells
  • shredded cheddar or Mexican blend cheese

Instructions

  1. Preheat the oven to 350°F and arrange two racks near the center of the oven. Cook and crumble the beef in a large skillet. Sprinkle with spices as it cooks.
  2. When the beef finishes cooking, add the black beans and the spinach. Remove from the heat and stir to wilt the spinach.
  3. Spread the tostada shells across two baking sheets, divide the beef mixture onto them, and top with cheese.
  4. Place the baking sheets in the oven and bake until the cheese has melted, about 5 minutes.

Black Bean Tostadas

Ingredients 

  • 1 can black beans drained
  • 1 teaspoon olive oil
  • 2 teaspoons Mexican spice mix or taco seasoning
  • 1 cup baby spinach leaves roughly chopped
  • 12 tostada shells
  • 3-4 cups shredded cheddar or Mexican blend cheese

Instructions

  • Preheat the oven to 350°F and arrange two racks near the center of the oven.
  • Drain and rinse the black beans. Place them in a medium sized mixing bowl and drizzle with oil. Sprinkle with the spice mix and stir to coat. Add the spinach to the bowl and stir to mix throughout.
  • Arrange the tostada shells across two baking sheets and sprinkle each tostada with a couple tablespoons of cheese. Divide the bean mixture over the tostadas. Top generously with the remainging cheese.
  • Place the baking sheets in the oven and bake until the cheese has melted, about 5 minutes.
