Black Bean Tostadas

If you're looking for a quick and flavorful snack that kids and adults will enjoy, these black bean tostadas are the answer. Tostadas are basically oversized nachos, so what's not to love here?

Ingredients

  • 1 can black beans drained
  • 1 teaspoon olive oil
  • 2 teaspoons Mexican spice mix or taco seasoning
  • 1 cup baby spinach leaves roughly chopped
  • 12 tostada shells
  • 3-4 cups shredded cheddar or Mexican blend cheese

Instructions

  • Preheat the oven to 350°F and arrange two racks near the center of the oven.
  • Drain and rinse the black beans. Place them in a medium sized mixing bowl and drizzle with oil. Sprinkle with the spice mix and stir to coat. Add the spinach to the bowl and stir to mix throughout.
  • Arrange the tostada shells across two baking sheets and sprinkle each tostada with a couple tablespoons of cheese. Divide the bean mixture over the tostadas. Top generously with the remainging cheese.
  • Place the baking sheets in the oven and bake until the cheese has melted, about 5 minutes.
