Heads up, fellow mushroom lovers! This is a knife and fork bruschetta, not the kind you’d pick up and eat with your hands. You are going to want to sop up every last bit of that creamy sauce and drippy egg with the toast. It’s mushroom heaven, even for a girl who has a LOT of mushroom recipes. And, if you like mushrooms, don’t miss out on these crab stuffed mushrooms too!

Mushroom Bruschetta

This recipe for mushroom bruschetta was inspired by the truly divine tapas served at La Boca restaurant in New Mexico. My sister and I have been driving up to Santa Fe and ordering it nearly every time I visit her for many years now. (If you’re in the area, it’s my favorite item on the menu and it’s well worth a visit!)

The bruschetta at La Boca features a toasted baguette cooked with mushrooms and cream, topped with a fried egg and a sprinkling of cheese. I’ve played with a couple of different ways to copy that recipe and the method and ingredients below have become my absolute favorite.

Ingredients and Substitutions

Bread – Go for a fresh, crusty loaf. I love a classic French baguette for bruschetta.

Cheese – I love the almost nutty flavor of freshly grated parmesan. But, more importantly, the melted cheese serves as a barrier that helps keep your toast from getting soggy, right away. You can swap for pre-shredded cheese, but I find that it doesn’t melt as easily.

Mushrooms – Cremini and button mushrooms have a firm, meaty texture that holds up well with this creamy sauce. I’ve made it with both, and they remain my preference.

Prepping the bread for toasting.

The Cream Sauce – Real heavy cream and olive oil give the sauce its thick, velvety consistency and rich flavor.

The Aromatics – I use shallots, garlic and fresh thyme to develop the savory flavors and depth in my sauce. You can swap the shallots out for onion in a pinch, but the flavor is a little sharper. So, make sure you dice them very finely.

Eggs – A soft cooked egg provides the perfect finish. I like the contrast that the runny yolk brings to each bite as it mingles with the bruschetta.

Notes on Equipment

  • Bread knife. A good serrated knife glides through a crusty baguette without crushing it, which matters when you want clean half-inch slices that toast evenly. Mine is inexpensive and has outlasted knives that cost three times as much.
  • Cutting board
  • Chef’s knife
  • Large rimmed baking sheet
  • Pastry brush
  • Large stainless skillet. This one heats evenly, there’s plenty of room to brown the mushrooms in a single layer without crowding, and it holds the cream sauce nicely afterward. It’s been in my kitchen for seven years.
  • Large non-stick skillet with lid
  • Wooden spoon
  • Spatula
  • Measuring cups and spoons

How to Make Mushroom Bruschetta

Toasting the Bread

Preheating the Oven: Before I do anything else, I set the oven to 375.

Slicing the Bread: While the oven is heating, cut your bread into half-inch thick slices.

Preparing the bread: We are going to brush each slice of bread with olive oil on both sides, then sprinkle the tops with salt.

Arranging on a Pan: Space out all the slices on a baking sheet in one layer. There should be room for air to flow between them.

The heavy cream is added to the pan with the shallots and mushrooms.

Toasting the First Side: I pop the baking sheet into the oven and allow the bread to toast until golden brown on top, about 3 minutes.

Prepping the Produce: While the bread is in the oven, clean the mushrooms and then chop them into half-inch pieces. I also finely dice the shallots and mince the garlic cloves while the bread is in the oven. If you are using freshly shredded Parmesan, this is the time to grate it.

Continue Toasting: We need to flip each slice of toast over, then let them continue for another 3 minutes until both sides are evenly toasted.

Warming the Skillet: When there’s about a minute left on the oven timer, set a pan over medium heat on the stove. It should be ready in 1-2 minutes.

Changing Gears: Pull your sheet pan out and turn the oven off. We’ll start the broiler in just a bit.

The creamy mushrooms simmer in a metal pan on the stove.

Making the Mushroom Topping

Cooking the Mushrooms: I add the chopped mushrooms to the hot skillet (they go in dry, no oil!) and let them sear on one side for 3 minutes or so.

Flipping the Mushrooms: Once they’ve browned on the first side, you’ll flip each of them and cook for another 3 to 4 minutes, giving them an occasional stir.

Adding the Flavor: Now we are going to add the olive oil, minced garlic, and diced shallots to the pan and season with salt and pepper. I let it cook for a minute or so, until fragrant.

Making the Sauce: Reduce the heat to low, then you pour the cream right into the skillet with the mushrooms. Toss in a couple sprigs of thyme. I let the sauce simmer until thick and creamy. This usually takes about five minutes.

Assembling the Bruschetta

Starting the Broiler: The final stretch of the recipe is going to be active work, so set your oven to BROIL before you start frying the eggs.

Frying the Eggs: While the sauce simmers, melt a pat of butter in a large skillet over medium-low heat. When the butter starts to foam, carefully crack the eggs into the pan. Depending on the size of your pan, you may need to do two at a time and repeat the step.

Finishing the Eggs: Add a tiny splash of water to the pan, then cover it with a lid to steam the tops. Mine finish in just a few minutes, because I like the yolks as runny as possible. Pull them from the heat when finished to your liking and transfer to a plate.

Making it Cheesy: While the eggs are covered, I quickly sprinkle a layer of freshly grated parmesan onto the toast slices. They’re going to go under the broiler for 30 to 60 seconds just until the cheese has melted.

Discard the Thyme: Once the sauce has thickened, you’ll remove and discard the thyme before assembling the bruschetta.

Layering the Bruschetta: Once you pull the toast from the broiler, divide the toasted slices evenly into four rimmed serving dishes. Top each one with a generous portion of the creamy mushroom sauce and an egg.

Serving: I like to top each serving dish with another sprinkle of parmesan cheese and freshly chopped Italian parsley before digging in.

All of the ingredients are near the stove, ready to assemble.

Expert Tip

A lot of recipes will instruct you to cook until fragrant. That’s a good sign that you’ve just added an aromatic ingredient (the garlic and shallots in this recipe) to the dish. We call them “aromatic” because as they heat up, the smell becomes more pronounced. The heat releases flavorful oils and compounds, the same way it does when we give spices time to “bloom”.

The good news is that it really doesn’t take that long. It takes just 30 to 60 seconds to cook the aromatics in this mushroom bruschetta until fragrant. But, don’t skip this step! Keep stirring and pay attention to the smell rather than watching the clock. The aroma should smell stronger, never burnt or bitter. Follow your nose, and you’ll know when to add the next ingredient.

Cover the Eggs – Sunny side up eggs are like a golden goose. A unicorn. A myth. Or, at least, that’s how they used to feel to me. But, the trick is to add some water (steam) and trap the heat over them by covering the pan. This protects the dreamy, creamy egg yolks and lets the whites cook through with no need to flip them.

Shred It Fresh – I’m a big fan of freshly shredded cheese. Not in every single recipe. But, especially when you need it to melt quickly and evenly, shredding from a block will pay off. The starches the big brands use to coat pre-shredded cheese can make it harder to melt.

Don’t Walk Away – I’ve had a lot of experience working with my broiler. And, it’s nothing to be afraid of. But, I definitely have learned to respect it. That’s why I am so grateful for my easy kitchen timers. They bring my attention back to the Parmesan I’m melting, right on time!

Serving Suggestions

Whether I’m making this bruschetta for brunch or for lunch, I like to pair it with something fresh and light. I know, it’s a shock, but your girl loves a salad. For simple options, I go with a simple romaine salad or even a chopped caprese salad.

But, especially when the winter months start calling, you’ll find me pairing it with crunchier options. You can’t go wrong with this Brussels sprouts salad with bacon. And, I adore my kale crunch salad. Both of them have a mild sweetness that I really like with the savory toast.

Frequently Asked Questions

What bread can I use instead of a baguette?

Any fresh, crusty loaf of bread can serve as the base for mushroom bruschetta. It just needs to be substantial enough to hold up to the creamy sauce. Italian style breads like ciabatta are a fantastic choice. Steer clear of flimsy white sandwich slices or pungent whole grain loaves.

Can I make this recipe with milk instead of cream?

I mean, technically you can. But, I wouldn’t. Not if you want the sauce to be thick and rich. Milk will result in a sauce that’s much thinner and less satisfying.

Can I use frozen or canned mushrooms?

No. I don’t recommend it. Fresh mushrooms have the right texture for this job, and the others simply will not work as well.

Ingredients

  • 1 crusty French baguette sliced into ½-inch slices
  • 3 tablespoons olive oil divided
  • ½ teaspoon kosher salt divided, adjust to taste
  • ¼ teaspoon freshly ground black pepper adjust to taste
  • 16 ounces crimini or button mushrooms chopped into ½-inch pieces
  • 1 shallot minced
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 2 sprigs of fresh thyme
  • 2 tablespoons Parmesan cheese plus more for topping
  • 1 tablespoon butter
  • 4 eggs
  • 1 tablespoon fresh Italian parsley finely chopped

Instructions

To Toast the Bread

  • Preheat the oven to 375°F. Arrange the sliced bread in a single layer on a large baking sheet. Brush the bread on both sides with olive oil, about 2 tablespoons. Sprinkle the top of each slice lightly with salt.
  • Bake until toasted golden brown, about 6 minutes, turning halfway through. Remove from the oven and increase the oven heat to BROIL.

To Cook the Mushrooms

  • Warm a large stainless skillet over medium heat for 1-2 minutes. Add the mushrooms to the pan and spread them across the pan in a layer. Cook for about 3 minutes on one side. Stir and continue cooking while stirring occasionally for an additional 3-4 more minutes.
  • Season the mushrooms with salt and pepper. Add the remaining tablespoon of oil along with the shallot and the garlic, stir, and cook for an additional minute until fragrant.
  • Add the cream to the skillet along with the thyme and bring to a simmer. Lower the heat to just enough to steam and barely simmer and thicken the cream for about 5 minutes. Remove and discard the thyme sprigs.

To Cook the Eggs – OPTIONAL

  • Melt ½ tablespoon butter in a large non-stick skillet over medium-low heat. When the butter begins to foam, tilt the pan to coat the bottom with butter. Add 2 eggs to the skillet. When the edges of the eggs turn white, season lightly with salt and pepper. Add a tablespoon of water to the pan and cover with lid.
  • Cook for 2 minutes, until the eggs are done to your liking. Slide the cooked eggs onto a plate and tent with foil. Drain any liquid in the pan and add ½ tablespoon butter to the hot skillet. Repeat the steps with 1-2 more eggs.

To Assemble the Toasts

  • Top the toasted bread with the Parmesan cheese and place it under the broiler for just a minute or so until the cheese has melted. Do not walk away.
  • Remove the toasts from the oven. Place them in four serving dishes with a rim and top with the creamy mushroom mixture, an additional light sprinkle of Parmesan, parsley, and an egg, if desired.

Notes

You can prepare the toast for this recipe a couple of different ways. While you can certainly pop it under the broiler for a quick minute, you’ll achieve a more perfectly toasted slice of bread by baking it instead.
