Sweet and Sour Chicken Kabobs on the grill are a lightened-up fresh version of a favorite Chinese take-out dish.

Kabobs are such an easy thing to make. It is your entire meal, sides and all on a stick! Easy to make and serve. Sometimes I will make rice to go with these or just pile them on a platter by themselves and dinner is served.

As with any time you are cooking small bites of meat, take care not to overcook. Watch closely while the skewers are on the grill. As the chicken cooks through, be sure you remove it as soon as it finishes cooking.

Have you ever tried grilled pineapple? Grilling fresh pineapple brings out such an amazing sweetness! The sugars caramelize with the heat and the char marks add to the depth of flavor.

Bell peppers add a great balance to countless recipes and that is proven once again with these chicken kabobs. I could happily eat these simple skewers on repeat.

Tender juicy bites of chicken, bell peppers, and onion are sweetened with your favorite bbq sauce to create these easy, saucy BBQ Chicken Skewers.

One thing to note though is to make sure you clean your grates and lightly oil them whenever you grill a fruit like a pineapple. It can easily pick up all those bits and pieces on the grill and have a slightly off-flavor.

When making kabobs or skewers be careful to not pack the kabob too tightly. Loosely placing the items together or even leaving a little bit of space will result in faster more even grilling.

When using wooden skewers, it’s recommended to soak them for 15-20 minutes before cooking. I typically soak the skewers while prepping the meat and vegetables. The skewers will blacken over the grill but rarely burn this way.

Chicken Pineapple Skewers

Pineapple Chicken Kabobs

These chicken kabobs with bell pepper and pineapple are a grilling season favorite. It takes just a few ingredients:

  •  olive oil
  • apple cider vinegar
  • honey
  • garlic cloves 
  • low-sodium soy sauce
  • boneless skinless chicken thighs
  • red pepper
  • pineapple chunks fresh or canned

Sweet and Sour Chicken Kabob Recipe

  1. Combine the oil, vinegar, honey, garlic, and soy sauce in a bowl or gallon-size zip-close bag. Add the chicken and turn to coat to make sure it is covered with marinade. Place in the refrigerator for at least 6 hours or overnight to marinate.
  2. On metal or wooden skewers, alternately thread peppers, pineapple, and chicken pieces.
  3. Grill the skewers over medium-high heat 5-6 minutes on each side, just until the chicken has cooked through.
Sweet and Sour Pineapple Chicken

I love a dinner that can be made entirely on the grill when the weather is nice and I just don’t want to spend time in the kitchen. A simple grilled chicken or steak dinner can be finished off nicely with grilled bell peppers or corn on the cob.

Ingredients 

Chicken Marinade

  • ½ cup olive oil
  • ½ cup apple cider vinegar
  • ¼ cup honey
  • 3 garlic cloves minced
  • 1 tablespoon low-sodium soy sauce
  • pounds boneless skinless chicken thighs

Additional Skewer Ingredients

  • 1 large red pepper
  • 2 cups pineapple chunks fresh or canned

While fresh pineapple is always my first choice, canned pineapple will also work nicely in this recipe.
