Amish Scalloped Corn Recipe

If you’re like me, you might never have heard of this dish before. I grew up eating corn pudding and cornbread. But, this Amish scalloped corn recipe is somewhere in between the two in terms of texture.

I came across it after moving to Ohio and becoming more acquainted with the Amish community. Scalloped corn is a popular dish that typically combines corn with breadcrumbs or crackers, eggs, and sometimes cheese.

The salty and buttery notes from the Ritz crackers in this recipe give way to just a hint of sweetness from the corn. It is much tastier than I would have believed, just looking at the ingredients list.

But that’s not really all that surprising. I’ve yet to meet an Amish recipe I didn’t like. They sure know how to make delicious food and keep it simple!

Scalloped Corn Recipe

You’ll need the following ingredients to make this recipe:

  • eggs
  • milk
  • Ritz crackers
  • canned corn
  • butter
  • sugar
  • salt and pepper

Scalloped Corn

To begin, preheat the oven to 350ºF. Then, grease an 8 or 9-inch baking dish with butter. Add the eggs and milk in a large bowl and whisk to combine. Stir in the corn, melted butter, sugar, salt, and pepper.

Finally, add the crushed cracker crumbs and stir to mix throughout. Pour the entire mixture into the greased pan. Bake for 40-45 minutes, until light brown. The casserole should no longer shake when removed from the oven.

Ingredients 

  • 2 eggs
  • 1 cup milk
  • 14 Ritz crackers about ⅔ cup crushed cracker crumbs
  • 29 ounces canned corn drained, 2 cans worth
  • ¼ cup butter melted
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 350ºF. Grease an 8 or 9-inch baking dish with butter. Add the eggs and milk in a large bowl and whisk to combine.
  • Stir in the corn, melted butter, sugar, salt, and pepper. Add the crushed cracker crumbs and stir to mix throughout. Pour the mixture into the greased pan.
  • Bake for 40-45 minutes, until light browned and the casserole no longer shakes when removed from the oven. Serve warm.
