Cucumber Corn Salad
When the weather heats up, and fresh sweet corn is easily found, I truly can’t get enough of it. (Hence the reason why it tends to appear in so many recipes these days!) This corn cucumber salad is a perfect blend of crisp, juicy sweetness in a tangy dressing with just the tiniest hint of heat.
This recipe takes classic cucumber salad and wakes it up with the flavors of Mexican sweet corn. The sweet corn, crunchy cucumber, and creamy dressing come together in the best way. This salad is cool, refreshing, and full of flavor.

The dressing clings to the corn and cucumbers, coating every bite without overpowering the fresh flavors. It’s rich and creamy, while the lime juice keeps the flavors from feeling heavy. A sprinkling of cilantro brightens it all nicely, too.

Corn and Cucumber Salad

Bold and spicy flavors meet the refreshing crunch of fresh cucumbers in this spicy Asian cucumber salad. This simple side dish is endlessly snackable.
Juicy, raw corn kernels are tossed with crisp bell peppers and tangy tomatoes in a light dressing to create this zesty corn salad. (I toss this into other salads, dip it with chips, or eat it straight from the fridge. It’s a staple for me in the summertime.)
