- 2 eggs
- 1 cup milk
- 14 Ritz crackers about ⅔ cup crushed cracker crumbs
- 29 ounces canned corn drained, 2 cans worth
- ¼ cup butter melted
- 1 tablespoon sugar
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Preheat the oven to 350ºF. Grease an 8 or 9-inch baking dish with butter. Add the eggs and milk in a large bowl and whisk to combine.
Stir in the corn, melted butter, sugar, salt, and pepper. Add the crushed cracker crumbs and stir to mix throughout. Pour the mixture into the greased pan.
Bake for 40-45 minutes, until light browned and the casserole no longer shakes when removed from the oven. Serve warm.
