Ingredients

  • 2 eggs
  • 1 cup milk
  • 14 Ritz crackers about ⅔ cup crushed cracker crumbs
  • 29 ounces canned corn drained, 2 cans worth
  • ¼ cup butter melted
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 350ºF. Grease an 8 or 9-inch baking dish with butter. Add the eggs and milk in a large bowl and whisk to combine.
  • Stir in the corn, melted butter, sugar, salt, and pepper. Add the crushed cracker crumbs and stir to mix throughout. Pour the mixture into the greased pan.
  • Bake for 40-45 minutes, until light browned and the casserole no longer shakes when removed from the oven. Serve warm.
