Spicy Cajun Cabbage

Ingredients

  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic or garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated onion or onion powder
  • ½ teaspoon crushed oregano
  • ½ teaspoon crushed thyme
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons butter
  • 1 small onion sliced thin, about 1 cup
  • 3 cloves garlic minced
  • ½ large head of green cabbage sliced very thin, about 6 cups
  • 2 tablespoons water

Instructions

  • Combine paprika, garlic, salt, pepper, onion, oregano, thyme, and cayenne in a small bowl. Melt the butter in a large deep sided skillet over medium high heat. Add the onion and stir to coat. Cook, stirring frequently, until softened, about 4-5 mintues. Add the garlic and continue cooking a minute longer, until fragrant.
  • Add the cabbage and toss to combine. Reduce heat to medium, add water and cover with lid. Cook, stirring occassionally, for about 5-6 minutes, until the cabbage begins to soften.
  • Uncover, sprinkle with spices and stir to mix well. Continue cooking uncovered until the cabbage is bright green and tender, about 2 more minutes.
