Marinated Tomatoes

Infused with the flavors of balsamic vinegar and plenty of seasonings, you will want to pour these mouth-watering Marinated Tomatoes over everything.

Ingredients

  • 16 ounces bite size tomatoes halved or full-size tomatoes cut into 1-inch pieces
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • 2 tablespoons fresh Italian parsley chopped small
  • 6 basil leaves sliced very thinly
  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic minced

Instructions

  • Place the tomatoes in a medium-sized bowl and sprinkle with sugar, salt, pepper, parsley, and basil. Add the oil, vinegar, and garlic.
  • Toss well and allow the tomatoes to marinate at room temperature or in the refrigerator for a few hours.

Notes

I’ve marinated just about every possible variety of tomatoes with this recipe. It will work nicely with whatever tomatoes you happen to have on hand.
