- ½ pound angel hair pasta or thin spaghetti
- 3 medium-size ripe, large tomatoes about 3 cups, diced into ½-inch pieces
- 4 cloves garlic minced
- ¼ cup extra-virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 3-4 tablespoons fresh lemon juice about 1 small lemon's worth OPTIONAL
- 2 tablespoons parsley
- 1 teaspoon basil optional
Cook the pasta, drain and set aside. Warm the oil in a large skillet over medium-high heat.
Add the tomatoes and garlic. Stir and cook for just a couple of minutes, until the tomatoes have warmed through and have started to soften.
Add the cooked pasta and toss to combine. Season with salt and pepper. Add the lemon juice. Taste and adjust salt and pepper as needed. Add parsley, and basil if desired, and toss again. Serve warm.
