Creamed Peas

Smooth, creamy, and classic creamed peas cooked in a buttery roux aren't just for the holidays at grandma's house.

Ingredients

  • ¼ cup butter
  • 2-3 tablespoons all purpose flour
  • 2 cups milk
  • 16 ounces frozen peas about 4 cups
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Melt the butter in a saucepan over medium heat. Add the flour and whisk until smooth.
  • Add the milk and continue cooking over medium heat, whisking frequently, until the sauce has thickened.
  • Add the peas and to the sauce. Season with salt and pepper. Continue cooking and stirring until the peas are heated through, about 3 minutes more.
  • If the sauce is too thick, gradually stir in more milk until it becomes your desired consistency. Taste and add additional salt and pepper, as needed.
