Broccoli Cauliflower Salad

Crunchy yet chewy; sweet and smokey, I feel like goldilocks when I eat this salad because it has just the right amount of everything.

Ingredients

  • 3 cups broccoli cut into small florets and matchsticks
  • 3 cups cauliflower cut into small florets
  • 1 cup raisins mixed, golden, or regular
  • ¼ cup red onion diced small
  • 8 ounces bacon cooked, drained, crumbled

Dressing

  • ½ cup mayonnaise
  • 2 tablespoons warm bacon grease optional
  • 2 tablespoons white sugar
  • 1 tablespoon white vinegar

Instructions

  • Combine the broccoli, cauliflower, raisins, red onion, and bacon in a large mixing bowl.
  • In a small bowl or large glass measuring cup, combine the mayonnaise, bacon grease (if desired), sugar, and vinegar. Whisk or stir until smooth. Pour the dressing over the ingredients in the bowl and toss well to coat.
  • Refrigerate for an hour or two before serving to allow the flavors to mingle. This will keep nicely for 2-3 days. Stir well before serving.
