Baked Zucchini

Baked zucchini is slightly sweet with crispy edges and a smooth rich texture. It's an easy side dish all summer long.

Ingredients

  • 1 tablespoon olive oil
  • 4 medium size zucchini cut into 1-inch pieces
  • ½ teaspoon kosher salt adjust to taste
  • ¼ teaspoon freshly ground pepper adjust to taste

Instructions

  • Preheat your oven to 350°F. Place the zucchini on a baking sheet and drizzle with oil. Season with salt and pepper and toss to coat.
  • Bake the zucchini for 10-12 minutes and check for doneness. Depending on the size of the pieces, cook an additional 2-4 minutes until the pieces are barely fork-tender and remain crisp on the edges.

Notes

Putting your zucchini under the broiler for a few minutes after baking adds a nice crispness to the tops and edges.
