3poundssweet potatoespeeled and cut into 1-inch pieces
1tablespoonkosher saltfor boiling
4tablespoonsbutter
¼cupheavy cream
½teaspoongranulated garlic or garlic powder
½teaspoonsmoked paprika
½teaspoonkosher salt adjust to taste
½teaspoonfreshly ground black pepper adjust to taste
Instructions
Place the potatoes in a large pot and cover them with water. Bring to a boil. Add 1 tablespoon of salt and stir to dissolve. Boil for 10-15 minutes, until you are able to easily pierce with a fork. Take care not to overcook.
Drain potatoes and return them to the pot. Place the pot back on the stove over very low heat. Add the butter and cream to the potatoes. Use a potato masher or hand mixer to mash the potatoes and incorporate the butter and cream into the potatoes.
Sprinkle with garlic, paprika, salt, and pepper and stir to mix well. Taste and adjust seasonings as desired. Serve warm.
