3medium-size ripe, large tomatoesabout 3 cups, diced into ½-inch pieces
4cloves garlicminced
¼cupextra-virgin olive oil
½teaspoonkosher salt
½teaspoonfreshly ground black pepper
3-4tablespoonsfresh lemon juiceabout 1 small lemon's worth OPTIONAL
2tablespoonsparsley
1teaspoonbasiloptional
Instructions
Cook the pasta, drain and set aside. Warm the oil in a large skillet over medium-high heat.
Add the tomatoes and garlic. Stir and cook for just a couple of minutes, until the tomatoes have warmed through and have started to soften.
Add the cooked pasta and toss to combine. Season with salt and pepper. Add the lemon juice. Taste and adjust salt and pepper as needed. Add parsley, and basil if desired, and toss again. Serve warm.
