6large ears of fresh cornkernels removed, about 8 cups

1red bell pepperchopped into ¼-inch pieces, about 1 cup
1green bell pepperchopped into ¼-inch pieces, about 1 cup
½small red onionminced into ⅛-inch pieces, about ½ cup

⅓cupfresh lime juiceabout 3 large limes
3tablespoonslight-flavored olive oil

Instructions
Combine the corn, tomatoes, bell peppers, onion, and cilantro in a large mixing bowl. Stir to combine.
Drizzle lime juice and olive oil over the corn and season with salt, black pepper, and cayenne. Stir to mix throughout. Taste and adjust seasonings as desired.
