Ingredients

bite size tomatoes
halved or full-size tomatoes cut into 1-inch pieces

sugar

kosher salt

fresh Italian parsley
chopped small

sliced very thinly

Instructions
Place the tomatoes in a medium-sized bowl and sprinkle with sugar, salt, pepper, parsley, and basil. Add the oil, vinegar, and garlic.
Toss well and allow the tomatoes to marinate at room temperature or in the refrigerator for a few hours.
Notes
I’ve marinated just about every possible variety of tomatoes with this recipe. It will work nicely with whatever tomatoes you happen to have on hand.
