BBQ Chicken Skewers

Tender juicy bites of chicken, bell peppers, and onion are sweetened with your favorite bbq sauce to create these easy, saucy BBQ Chicken Skewers.
Prep Time: 20 minutes
Cook Time: 12 minutes
Servings: 4

Ingredients

  • 1 ½ pounds boneless skinless chicken thighs cut into 1-inch cubes
  • ¾ teaspoon kosher salt
  • ½ teaspoon cracked pepper
  • ¾ cup barbecue sauce
  • 1 large red bell pepper seeded, cut into 1-inch pieces
  • 1 large green bell pepper seeded, cut into 1-inch pieces
  • 1 small red onion cut into 1-inch pieces

Instructions

  • Season chicken cubes with salt and pepper. On metal or wooden skewers, alternately thread peppers, onion, pineapple, and chicken pieces. Brush generously with about half of the barbecue sauce.
  • Grill the skewers over medium-high heat 6-7 minutes on each side, or until the chicken has cooked through. Brush the sides with barbecue sauce as you turn the skewers.

Notes

When using wooden skewers, it's recommended to soak them for 15-20 minutes before cooking. I typically soak the skewers while prepping the meat and vegetables. The skewers will blacken over the grill but rarely burn this way.
