1 ½poundsboneless skinless chicken thighscut into 1-inch cubes
¾teaspoonkosher salt
½teaspooncracked pepper
¾cupbarbecue sauce
1large red bell pepperseeded, cut into 1-inch pieces
1large green bell pepperseeded, cut into 1-inch pieces
1small red onioncut into 1-inch pieces
Instructions
Season chicken cubes with salt and pepper. On metal or wooden skewers, alternately thread peppers, onion, pineapple, and chicken pieces. Brush generously with about half of the barbecue sauce.
Grill the skewers over medium-high heat 6-7 minutes on each side, or until the chicken has cooked through. Brush the sides with barbecue sauce as you turn the skewers.
Notes
When using wooden skewers, it's recommended to soak them for 15-20 minutes before cooking. I typically soak the skewers while prepping the meat and vegetables. The skewers will blacken over the grill but rarely burn this way.
