If you're looking for a quick and flavorful snack that kids and adults will enjoy, these black bean tostadas are the answer. Tostadas are basically oversized nachos, so what's not to love here?
Preheat the oven to 350°F and arrange two racks near the center of the oven.
Drain and rinse the black beans. Place them in a medium sized mixing bowl and drizzle with oil. Sprinkle with the spice mix and stir to coat. Add the spinach to the bowl and stir to mix throughout.
Arrange the tostada shells across two baking sheets and sprinkle each tostada with a couple tablespoons of cheese. Divide the bean mixture over the tostadas. Top generously with the remainging cheese.
Place the baking sheets in the oven and bake until the cheese has melted, about 5 minutes.
