½teaspoonfreshly ground black pepper adjust to taste
½cupshredded Mexican cheese blend or plain cheddar cheese
1tablespoonfinely chopped Italian parsley
Instructions
Preheat the oven to 425°F. Place the bacon grease on a large metal sheet pan and pop it in the oven for a moment, just to melt it to liquid if needed. Add the potatoes to the sheet pan. Toss to coat thoroughly and sprinkle generously with salt and pepper.
Spread the potatoes across the baking sheet. Roast for 40 minutes, remove from the oven and stir. Sprinkle with cheese and crumbled bacon.
Roast an additional 3-5 minutes just to melt the cheese. Remove from the oven and sprinkle with parsley before serving.
Notes
Feel free to swap sliced green onions for the parsley in this recipe. Either one will work nicely to brighten the flavors.
