My first time making a sheet meal and this did not disappoint! We only had frozen broccoli florets but I tossed them with a tiny splash of oil, onion powder and salt and it all turned out great! I was worried they’d be mushy but I took out of freezer when I started potatoes and cut them small if they were large. Thank you sooooo much.

I added lemon pepper seasoning and garlic. Used potatoes, carrots, broccoli, bell pepper, onions and wedges of tomato. Followed cooking times. Everything mixed with olive oil to coat. Perfection!

I use a half size sheet pan, Jennifer. (approximately 13″x18″) The pan is definitely full though. If I want to cook a few extra vegetables though, I often split the recipe between two pans and just rotate them in the oven if needed. I hope that helps!
