Stir Fried Green Beans

Many of our favorite stir fries begin with fresh ginger and garlic. Add some sauce, fish sauce, or oyster sauce, and kick up the heat just a little (or a whole lot sometimes!) with some chili sauce or red pepper flakes. Last, don’t forget to balance that heat with a bit of honey or brown sugar.

You can use the basic ingredients here with whatever meat and vegetables you like best. The aromatic garlic and ginger are a popular combination that works well together for everything from stir fried vegetables to beef, pork, chicken, and fish.

For a beef stir fry, skirt steak is my first choice. Flank steak is a good alternative if you can’t find skirt steak at the store.

It’s always easier to slice steak when it is cold. If you have time, place it in the freezer for about 30 minutes before slicing and it will cut beautifully.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4

Ingredients

  • 1 teaspoon coconut oil or light flavored olive oil
  • 1 pound skirt steak cut against the grain into very thin strips
  • 1 pound green beans trimmed
  • 3 inch piece of ginger about ¼ cup peeled and cut into very thin matchsticks
  • 4 cloves garlic minced
  • 2 tablespoons water
  • 2 tablespoons fish sauce or soy sauce
  • ½ cup fresh basil leaves roughly chopped plus more for topping
  • cooked rice for serving

Instructions

  • In a very large skillet, warm the oil over medium-high heat. Add the steak and cook, tossing or stirring constantly just until browned, about 4 minutes. Remove the cooked steak to a plate.
  • Add the green beans, ginger, and garlic to the juices left in the skillet. Toss to combine, add water, and cover with lid. Continue cooking over medium-high heat for 5 minutes. Uncover and continue tossing the green beans in the skillet constantly until the green beans are crisp-tender, about 5-7 minutes.
  • Return the beef and any juices to the skillet along with the fish sauce and basil. Toss quickly to coat and cook about a minute. Sprinkle with more basil, if desired and serve immediately, by itself or over rice.
