Cream Peas Recipe

There’s a story my mom tells of the first time she enjoyed dinner with my dad’s parents. My grandmother served cream peas and my mom had never had them before that day.

She loved them. She made sure to tell my grandmother how much she enjoyed them and as a result, my grandmother proceeded to make them again and again and again over the years.

Frozen peas or fresh peas may be used to make this recipe. While fresh vegetables are my first choice for many recipes, for this creamed peas recipe I always use frozen.

There’s also the added convenience of the fact that frozen peas tend to be more accessible most of the time.

Even though they are no longer my mom’s favorite, she does still make peas in cream sauce for special occasions. Fortunately, they are so easy to make, I serve them frequently as a weeknight side dish.

You simply can’t beat a delicious warm side dish that comes together in minutes.

Creamed Peas Recipe

Creamed peas are a super easy recipe to scale up or down. Considering the roux base is equal parts butter and flour, the ingredients stay very consistent and you can add or scale back the milk as needed for just the right consistency.

Ingredients

  • butter
  • all purpose flour
  • milk
  • frozen peas
  • kosher salt 
  • freshly ground black pepper

To make this recipe for creamed peas, start by melting the butter in a saucepan over medium heat. Add the flour and whisk until smooth.

Add the milk and continue cooking over medium heat, whisking frequently, until the sauce has thickened.

Add the peas and to the sauce. Season with salt and pepper. Continue cooking and stirring until the peas are heated through, about 3 minutes more.

If the sauce is too thick, gradually stir in more milk until it becomes your desired consistency. Taste and add additional salt and pepper, as needed.

  • ¼ cup butter
  • 2-3 tablespoons all purpose flour
  • 2 cups milk
  • 16 ounces frozen peas about 4 cups
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper
