I'm thrilled the salad was a hit. I bet it would be delicious grilled too!

In reply to <a href="https://vegetablerecipes.com/mushroom-rice/comment-page-1/#comment-6587">Carol</a>.

The only fresh herb in this recipe is the parsley and you're just substitute 2 teaspoons of dried parsley for 2 tablespoons of fresh. I'd recommend stirring it in earlier instead of sprinkling it over the dish right at the end. You can substitute dried for fresh in any recipe by using one third of the suggested amount. (i.e. 1 teaspoon dried vs 1 tablespoon of fresh) I hope that helps!

This is the best casserole I have ever made. I had to use red potatoes because we bought too many at the farmers market and used fresh green beans from my garden instead of corn. Soooo good!

Hi, I was wondering if you could use dried herbs instead of fresh ones in your recipes, we live in the country and fresh ones go bad fast unless used really quick. I've made a few of your recipes and enjoyed them but would like to use the dried herbs instead. if it's doable please give the equivalents. thank you for your recipes!!

Very tasty. I made it for 3 people who enjoyed it; one of which is very discerning when it comes to food. I feel it is fine as it is, but if you are into grilling, charring the corn first would take it over the top.
